You’ve heard of ayam penyet, but have you heard of its cousin ayam geprek? The two Indonesian dishes may be similar in terms of presentation (as they’re both essentially smashed fried chicken) but the ayam geprek is more of a killer. Exclusively sold at Papa Ayam, with its layers of Indonesian-level-of-spicy sambal (chili) slathered all over the smashed chicken, this deliciously fiery dish is not for the weak of heart. On the other hand, if you’re a fan of mala and other spicy dishes, you’re gonna find true love in the ayam geprek.

You’re given choices of a variety of Indonesian sambals, such as the original sambal, the cabe ijo (green chili) sambal which is milder, or the sambal matah (Balinese matah sambal) which is essentially raw onion, lemon grass and chili padi mixed with lime juice. If you’re scared to try, fear not! You can adjust the level of spiciness to your liking. To give it the true Indonesian experience, the chicken is served alongside fragrant white rice or, a cult fave all around the world, fried indomie.
